I recently created my first risotto, this was the recipe i used

i used garlic instead of shallots and added a shit ton more wine than 1/2 cup because im an alcoholic. if i would do it again i'd use fresh organic parsley and parm instead of my old crusty shit. gf loved it though, goes well with something spicy (i did dried chipotle crumbs as a crust on tuna steaks and pan seared em but still served it pretty raw)

yeah if you have adhd you will definitely screw it up. i couldn't even take a break refill my drink because the ratio of water:grain has to be the same at all times.

Just kidding, I'm a foodie too happy very nice recipe

I made eggplant lasagna the other night, turned out very well I must say. Used crumbled cheese instead of cottage cheese and OH-MY-GOD was it delicious.

Eggplant + zucchini that is.

what kind of cheese?

All italian food tastes the same/bland unless you really do something to make the sauce pretty sexy. the best italian food i've ever had was by my old roomates mom who actually was italian (born and raised). the only real difference i could tell in her food was that her sauce had high amounts of basil and garlic, but was spicy too without ruining any of the flavor so she must have added like red chili flakes too.

hate baking tbh. what i like about cooking is the science behind that, that you can be creative and impulsive with the ingredient choices and it will drastically change the outcome, potentially for the better.

with baking, you screw up the specific amounts and you might as well start over. only skill comes from decorating the cakes/pastries/whatevs that you make and i find that borus the clown
