What you see in the mount stores, is just a way to categorize the mounts. You can still only have one mount.
And, yes, you can recruit a "Mercenary" while traveling from town to town, but he acts as a temp buff that expires ~ which doesn't really qualify as a "mount" or "helper". It's just a buff like when you drink "ale" or see Crazy Audrey or the likes.
